Syracuse Custom Meats in Keller, TX. I have tried several places in the Llano/Burnet/Marble Falls area when I lived there and none of them can hold a candle to these guys. They make about 10 different kinds of sausage and will even make tamales out of your dead animals if you ask. We had an "after reception BBQ" the day after our wedding and served their sausage. Nobody could believe that it was venison. MMMM MMMMMM GOOOOODD!!

Country Slaughter House. Victoria, TX. Quality processing, with a knack for service. It had been years since I had been there (or my father) but the owner remembered the recipe my dad used for his sausage without having to look it up.

Got one there now. Hope to have a place within an hour or so of Victoria to hunt next year, so I have some more. Thinking about giving up the season tickets to offset a lease.

Syracuse Custom Meats, 4770 Keller Haslet Road, Keller, TX (817) 379-2230. It is not far from the Cabela's that is on I-35W. I have never used Kuby's so I could not give you a comparison.

TexAg - my granddad uses Midway in Katy. they do a great job, and make some damn fine wild hog smoked sausage. i'd try the phone book to get a phone number or maybe even google.

RR and Urban--have yall ever tried "The Buckstop" in Austin ? My hunters use them and I think the sausage is great.

"The Buck Stops Here" makes great sausage. I had some made with jalepeno & cheese this time....highly recommend it!

Rau's in Brenham if you like a more German style sausage, it's outstanding, Readfields in Bryan makes pretty mean sausage too.

Schott's Meat Processing just north of Helotes on Hwy. 16 in San Geronimo. Best I have ever had, save for Prasek's in Hillje. They do a great job and turn the meat around in about 2-3 weeks all vacuumed packed and labeled for you.
