Crazy we're already getting close to that time of year. Maybe a little premature but looks like T day is at my house this year.

Never done one in the egg.

Best advice for me? YouTube videos?

Thanks in advance guys

There was a thread on here last year with a bunch of good info in it. Of course, I can't find it now.

We did ours on the primo last year. Mayo as a binder and meat church holy voodoo rub. Put it on the smoker in an aluminum tray at ~250-275 degrees and just monitor temp. I think it took ours somewhere around 3 hours to reach 165. Then we tightly wrapped foil over the top of it so the juices would steam into the meat. Shut the bottom vent and let it sit there for another 30 mins to an hour or so. Or you can just rest it in the oven if you have enough space.

It turned out very good and will probably do it the same this year.

I've been smoking turkeys for quite a few years now on my BGE. I've had a lot of folks say it's the best Turkey they've ever had. That includes putting them side by side vs fried which is always delicious too.

Brine the bird. I usually do a 16lb for about 36 hours.
That's probably twice as long as some recommend but I've never had an issue.

1/2 cup salt & 1/2 cup brown sugar per gallon of water and ice. It takes about 6 gallons to submerge the bird depending on the size of your container / ice chest.
Lots of ice. You're keeping the bird cold for 1-1/2 days. If you need to add more ice later, do it in ziplocks so you don't dilute the brine.
2-3 oranges cut in half & squeezed
2-3 lemons cut in half & squeezed.
6 sprigs Thyme
6 sprigs Rosemary
Completely submerge bird.

Stuff the bird with everything listed above after removing from brine and before putting on pit.

Rub and inject bird with whatever flavor you desire.
I use Tony Chacheres Creole Style Butter injection and Tony Chacheres for the rub

Set your BGE up with a deflector and pan with a liquid in it. Beer or water.
225* - 250* until 165*
That normally takes about 15 - 20 minutes per lb

Enjoy

I've been tasked with the turkey this year, and I'm really tempted to get a couple of the pre-brined turkey breasts from HEB and smoking those Texas BBQ style, and then roasting some leg quarters so there is some dark meat.

Brining is mostly unnecessary nowadays as most supermarket birds have already been injected with a brine-broth solution. It will say on the label if that has been done to your bird.

If we weren't flying to Colorado for Thanksgiving week, I would absolutely be smoking ours on the Egg again. I usually smoke mine non spatchcocked, and with a small pan of water on top of a deflector.

Recipe above is fairly similar to mine, except use apples in the cavity as well.

Sounds great thank you.

Any issue with using a real butter marinade injection over something with soybean oil?

Personally I think that would be great. Smoking at 225 - 250* to an internal temp of 165 isn't that hot. Especially with the butter injection being internal. Butter burns around 350* IIRC.

Roadkill, did you ever wrap yours like the poster above mentioned?

Once I started frying turkeys for Tday I never looked back.

The first year that we hosted the in laws they were a little skeptical but it blows away the traditional oven cooked butterball or whatever.

Last year, I did two turkeys and they both got completely consumed.

I won't begrudge how any one else does it, but I 1) spatchcock it, 2) dry brine for a couple of days, 3) season with whatever you like (I don't use a binder and I usually season with Fiesta chicken rub), 4) toss it on at 375F (I have a Primo Oval XL) and 5) cook until 155F in breast (dark meat will be done fine if spatchcocked). Always good.

No, I have never wrapped.

Edited to add: unless I am transporting the Turkey to a gathering. Then it gets put in a pan or on a tray and covered with foil. At the house here it's pretty much timed out to be served when it comes off the pit.

I can't see how covering and resting could be a bad thing though. Like the poster mentioned, it renders the juices back into the meat. We do that with steaks for that purpose. And brisket. The real keys here are the brining and injection. That is what are keeping these smoked turkeys so moist.

Separate dark from white meat because they cook to different temperatures. Yes they tend to cook at about the right rates such that they finish at the same time but you can't count on it.

Brine 24 hours in a 2:1 ration salt:sugar brine. Add whatever else you like but that's minimum and honestly, about all you really need.

After brine pat dry, remove skin and season all. Again, with whatever you want but if you're looking for Texas BBQ smoked turkey type flavors make sure whatever you use has a little sugar in it. Not a lot, but some.

White meat goes to 135*F internal temp, wrapping foil with stick of butter and replace on pit, meat side down until internal temp hits 145*F. Remove and put in Yeti cooler or 150*F oven until ready to serve. Hold at least 15 min, so don't serve immediately.

Dark meat goes to 180*F internal temp then gets the same foil butter treatment but can go straight to the Yeti at that temp. Serve when you're ready.

Do NOT be afraid of poultry or pork cooked under 165*F. Pasteurization is a function of temperature OVER TIME. 165*F gets instant pasteurization. 145*F gets pasteurization in 9 min, hence the 15 min hold time. You'll never go back. Ever. EVER.

Unless you have people who just absolutely love dark meat, that is the way to go. The boneless, pre-brined breasts from H-E-B are absolutely elite. But if you're gonna do it… Get them now. They will absolutely dry up in the next few weeks.

As you can see in the photos above, that's what I used. Follow those steps and you will never ever go back to cooking to 165*F internal..

I use a JoeTisserie and could not recommend it enough. I think there is also a BGE rotisserie. Makes incredibly moist turkey with crispy skin. Does a great job on chickens and prime ribs as well.

It's cheaper to buy the whole turkey and carve off the breasts yourself.

Right, but for some people it's a convenience to not have to then manage a carcass which, if I'm honest, is valuable and should be used for stock, etc, or dark meat which some folks just don't like. Also, a single breast is better for small families.

It is cheaper to buy a whole bird. Yes. Absolutely. But there are reasons to do other things too.

Buy the bird at HEB whole. I've done it on my Primo many times. Brine, don't brine, inject, don't inject....none of this has ever made a bit of difference that is noticeable for the hassle. The injection can be nice if you want some extra seasoning, and then I'll toss a rub on the outside. Smoke it hot and fast and call it a day. Again, your just cooking a big chicken. Don't make this harder than it needs to be unless you just enjoy the process and extra cost, but again, none of that is necessary.

Damn BrazosDog02… I've never had such a visceral negative reaction to one of your posts Injection, stuffings etc… subjective BUT brining the turkey; I mean… if you don't bring the turkey are you even cooking a turkey?!

Whoops…didn't mean to be. My wife says I type loud. I dunno. I used to do all that stuff. Then one time I didn't. And it was the same. I have a tendency to go overboard with these kinds of things so I try to make an effort to stick to that which is really necessary.

As my wife says "gawd damn, dude, just get on with it already, and stop ADHD'ing this to death."

Spatchcock and dry brine. Will be quick, easy, and great. I've been doing it for years. Gave up frying.

After the turkey is done smoke a chocolate pecan pie.

Any of you tried the "mad max" method?

Put a bag of ice over the breast meat for 20 minutes before the cook to stall the cooking of the breast meat so the dark and white meat hit temp at the same time

I'll use clarified butter mixed with a little avocado oil (to keep if from solidifying and very finely ground black pepper. I prefer to dry brine and spatchcock for the BGE

We were a little hesitant to try this, initially. I'd encourage anyone to give it a shot. Our family starts texting early to see if we are bringing the turkey with the white stuff. If mine will be the only turkey, I do not dunk the bird. I'll put it on the side for those who are offended.

Meat Church has several different videos for spatchcock and traditional. Can't go wrong with any of them.

Spatchcocking it also helps even out the cooking time, and shortens the whole cooking time.

Hot and fast, 350F or so. Turkey doesn't need a long slow cook to tenderize like a brisket or pork butt.

If you are buying butterball or most of the other brands at the big box stores they are already brined to a point already, but home brining certainly doesn't hurt the taste at all. I brine if I have time or don't forget to.

Show up with a handle of Wild Turkey 101 and apologize for the misunderstanding. Then laugh about it over drinks and cornbread.
