Try Greg Landry at Madison County Taxidermy. He's on Hwy 21 between North Zulch and Madisonville. He has done both euros and shoulder mounts for our family in the past decade or so.

I think Nolan Giesenschlag does skull mounts. I've only used him for processing though.

+2 for Greg. He's done all of our deer and ducks for the last 10 years or so. Last we did one, I think he was around $125 for a Euro on a piece of driftwood

Palermo is excellent- and his prices reflect that. We are dropping one off today with brazos valley taxidermy. Seems to have great reviews and has been in business for quite a while.
