After admiring some of his work on this board, some months back I reached out to Josh -FightinFarrier18 to ask about him possibly crafting a kitchen knife for me. He was agreeable and I had some stabilized Granadillo (Mexican Rosewood) on hand, so I sent the wood his way for the handle material.
I was wanting the blade to be made from some good tool steel, so he purchased some new d2 and got to work in his forge. After some trial and error with the new steel, he ended up purchasing a laser temp gun to insure accuracy for the quench. He shaped, grinded, and attached the handle, followed by polishing and sharpening as time permitted between his busy farrier work.
His wife packed up the knife and shipped it out and then promptly went into labor! She apparently asked whether I received it several times, lol. I understand that everyone is doing fine!
The knife itself exceeded my expectations! The balance, strength and sharpness make it a very welcome tool in my kitchen. I have already used it to break down some chickens after which it received a light coating of avocado oil and went into my knife roll for which I am sure will be frequent use for years to come and someday a pass down to my son.
