Elders in beeville. I think there is a tuttles in woodsboro. All the rest I know are word of mouth guys that have been doing it on the side for years.

Tuttles is pretty good
Have only had the peppered hams from Elders (they are awesome), so they likely know what they are doing

Elders did all of mine when I lived there. Make sure to let them know it's quartered. They would say they were full, but that was usually for field dressed, not quartered

My grandparents lived in Beeville, and we still order Christmas hams from Elders every year. Good people.
