Looking for a hand-made kitchen/butcher knife for Christmas

How long do you want to ignore this user?
I figured the OB could come through.

My mother-in-law loves to cook and I'd like to give her a very nice kitchen knife for Christmas. Maybe a hand forged Damascus or similar.

A bonus would be if I could somehow help make it or put some personal touches on it.

Anyone local in BCS? Thanks!

I know that for kitchen knives, I've been wanting to get a set of Wustoff. They aren't custom, but they are great knives. They are $$$$. I've been wanting to get some, but at $1500 or so for a set of knives, they ain't cheap.

But, they really do make it easier in the kitchen when cooking and preparing food. I'll get some eventually.

Are these any good? How much of a pain is it to keep up the carbon steel instead of stainless?

After reading some reviews, I think they are also made in China…

They look cool. I'm looking for guy gifts more than MIL chef knives though… sorry to derail the thread.

She loves to cook but does she enjoy caring for knives? I love carbon steel knives, which much of Damascus covers. But you can't just leave them sitting around like you can a stainless knife. You have to at least wipe down somewhat quickly while cooking to keep from staining, time depends on what is being cut.

Stainless knives are easier to care for in most cases, but have some different issues depending on the specific steel with sharpening, etc. but hold edges for a long time.

Customization can be done in both.

Depending on what you find you really want, if you really want a personal touch, you're probably going to have to do this next year as this is busy season for knife makers...

Good advice and I didn't know this (and much more)! I believe she would care correctly for it if I explained the need to. I've decided to begin the "project" after the first of the year. Should be a long process anyway, to put some care into it. Thanks again!

There is a local knife maker that was on one of the competition shows where they have guys make a blade. I think it was called Forged in Fire. He offers a class where you can make a knife with him. I will post the guys name when my son hears back from his friend who made a knife with the guy.

I have Wustoff and like them, especially the smaller ones. But to be honest, i bought a couple Misen that are waaaay cheaper and I use them more often. They hold an edge much longer and i find them pretty balanced. Maybe try one and see if you feel same. Wont be out much if u disagree.

Not local to BCS, but East Compasso Knivery comes into BCS once every month or so. I'm sure he'd be willing to make a trip to town to deliver a knife. He's based out of Midland and is ecknivery on Facebook and Instagram. Recent Aggie grad of the past year or so.

Had him made a custom knife for the wife to process chickens and turkeys.

Took time to educate us and offer suggestions to make sure she ended up with the knife she wanted.
