Where to get a really great prime rib roast in Houston?

I know this isn't a true outdoors question, but there are a lot of posters on this forum who like to cook. I'm looking for a recommendation for where to but a really great prime rib roast in the Houston area. Preferably, west or northwest sides of town.

HEB usually puts whole rib roasts on sale around Thanksgiving and Christmas, but with the current prices of beef, I doubt they do it this year.

For clarification, you could probably still get your rib roast at HEB, I just don't think they will be on sale. I would ask the butcher at your local HEB.

Smitty's or Costco. Smitty's got so expensive for deer processing I quit going for everything else, too.

On Friday, Costco did not have any rib roasts out. Was thinking of getting it early but need to go back in a couple of weeks to check again. Gonna be very pricey this year.

Spoke to the butcher at HEB Plus this weekend. They will be having the prime ribeye roasts this year for Christmas, with and without the Holiday rub. However, will probably need to be more diligent about not waiting to the last minute, and making sure the cut from the big/small end is what you wanted (unwrap it at the counter before leaving).

Good buddy is an avid cook. Nothing but Costco goes on his table. HEB is his backup emergency plan.

And costs will be high. Wife picked up the Turkey today. She said it was the most she ever paid for a holiday bird in 37 years of marriage. 25 for a modest 12 pounder. Buy early and freeze as needed.

We got Butterball from HEB. Wife rarely grocery shops at target. But good to know.

Kroger in Houston has Butterball turkeys for $0.98/lb. Not sure where these other prices are coming from.

I take my Damascus steel butcher knife that I hand-forged when I was 12. Walk to my backyard where I've been raising the finest Wagyu for the past year. Lead it to our family slaughter house and proceed to cut out the finest roast you've ever seen.

I've gone to Pete's Fine Meats on Richmond near Chimney Rock and it was outstanding. It was also stupid expensive too. HEB has never done me wrong. Don't have a Costco membership anymore.

But, IMHO, proper cooking of the prime rib is more important than prime vs. choice or whatever. I rub mine down with tons and tons of kosher salt & fresh cracked pepper and do the reverse sear. Basically, the lowest setting the oven has for about 5 hours to get it to 120 internal temp. Take it out and rest for a couple hours while preparing everything else. Then 30 minutes before serving crank the oven up as high as it will go. Slather on a coat of butter and more salt & pepper and for like 15 minutes. Then let it rest about 10 minutes before serving. This gets is perfectly medium-rare inside and a good crust on the outside.

I'm probably going to come across as "that guy" but am I the only one that thinks Prime Rib is a con?

Sams or Costco will likely have CAB Choice at worst, but more likely prime ribeyes out. They're a little spendy right now though

Do you not like ribeye steaks?
I do love a good ribeye. Maybe I've just not had a good prime rib.
