In full disclosure, I grew up with Jesse but I can objectively tell you that his food is awesome. I try to go to Dai Due or the Taqueria whenever I'm in Austin. By the way, this is totally unsolicited, I'm just proud of my friend and love his food. This will be his follow up to his first cookbook Afield, which was a James Beard Award-finalist. So if y'all want to cook those *******s, check it out.

Jesse is also featured in the first two episodes of this seasons Meat Eater on Netflix. I have been meaning to check out his restaurant for a while now.

Dai Due is legit, just needs a better (pronounceable) name. Used to take visitors there often pre-2020. Highly recommend for those swinging by Austin. If they're packed, Salty Sow is just down the road or Micklethwait is 5 minutes away.

I watched those. Good stuff. Although Jesse could work on smiling a little more for the camera.

Love Dai Due. My friend used to do their accounting and still maintains a friendship with them. We go over there quite a bit for lunch. I also went to their 10 year anniversary as a guest of my friend and Jesse was cooking up all kinds of good stuff that night. I can honestly say I have yet to have something bad there.

Love the name and frequent the restaurant. Previously received his Afield book and butchery class as a gift... Both enjoyable.

Just noticed Kickstarter and funded for a couple books. Really appreciate all he does in this space.

Been to Dai Due several times. Excellent place. I chatted with Jesse for a little bit after the live Meateater podcast in Dallas. Nice guy. I bought his book Afield right when it came out. It's a great wild game cookbook.

Looking forward to this book, I contributed to his Kickstarter.

That book is absolutely beautiful. I have no intention of ever hunting a wild hog much less cooking one and I still want a copy for some reason.

I've had the good fortune to be on a couple of hunting trips where Jesse came along and cooked for us as well as doing some meat processing. He's an unbelievable chef and I got a kick out of watching him on Meat Eater as that was 100% his personality with no hamming it up for the camera. Him fishing with Van Zandt was an awesome look at the polar opposites of outdoorsmen with one all about the sport of it and the other all about the food/sustenance.

His parisa may be the single best dish I've ever tasted.
