I think it totally depends on your application.
I love my 6.5CM (bolt gun). And have shot everything up to and including elk with it. Been out to 1,000 on the range, 425 on pigs, and 350 on elk. If you put that pill where it needs to be, it will do it's work.
That being said, if elk sized game was your primary concern, I would choose the .308. I have shot a large bull 3 times with my .300 WM, and watched him devour the first two (one in lungs, one hit back of heart) and try to trudge on. Some of them are just freaking tough.
THAT being said, I wouldn't hesitate to shoot a big bull at ethical ranges with my 6.5CM, after seeing its effectiveness. My 6.5 will be along for the ride on my elk hunt this fall, not my .300WinMag.
