A Thanksgiving Protein Experiment

I want to try something different this Thanksgiving. In addition to my family's Thanksgiving meal, I'll also be participating in two separate "Friendsgiving" dinners, so I will have plenty of opportunity to cook an array of dishes.

One thing I've been wanting to try... a steak stuffed turkey. Think the "turducken" stuffed turkey monstrosity, but rather than loading the turkey with other poultry, I'd instead fill it with either a small prime rib (probably trim the spinalis and save for another time) or a large tenderloin and then smoke it on either my PBC or kamado cooker.

Any advice as I set off on this ridiculous journey? I'll be doing my research in the meantime, and obviously this will not be the only protein planned for at whichever Thanksgiving meal I decide to unleash it upon in case it goes horribly wrong (high likelihood...).

Forgive me for finding fault with your plan, but won't the prime rib just turn out to be overcooked steamed meat with no crust whatsoever?

Hell yeah post some pictures when it happens. I would probably sear the steak first before using it as stuffing

seems like a waste of a good cut of meat.. i would try it with a roast maybe if you are set on stuffing a turkey with another meat.

Yeah my plan was to brown the prime rib/tenderloin first before inserting into the turkey.

Maybe lightly flour and then sear in a skillet (like you'd do with a good roast) and then sew it up in the turkey.

My recommendation:

1) Season prime rib with S&P and fresh rosemary and thyme.
2) Open turkey cavity and put rib inside.
3) Before cooking, remove prime rib from cavity and throw turkey away.
4) Reverse sear prime rib, slice and serve.

In case you are actually dumb enough to waste a good cut of beef by wrapping it in turkey, my advice would be to talk yourself out of it.

Some ideas haven't been heard of before, because they're bad ideas and no one wants to admit to having them, not because they're novel.

Take FIDO*98*'s advice and talk yourself out of this idea.

We've stopped doing Turkey in my family and I smoke a prime rib since they usually go on sale. We enjoy adding several different side sauces: Red wine reduction, Green peppercorn cream or a horseradish. Everyone seems much happier than turkey.

However, the idea of a properly injected small pork shoulder shoved up in a turkey intrigues me.......

I'm still here. I replied right before your first post.

And against all your warnings not to - and more importantly, against my own better judgement - I'm still considering it.

The dang buckle hat wearing pilgrims and Squanto decreed that we must suffer through dry - bland - boring bird once a year in their honor. If I've gotta' choke down turkey, I'm gonna' at least do what I can to make it a little bit interesting, if not actually good.

How will this improve the turkey? All you are doing is ruining a good cut of meat. The turkey will still suck.

If that's your goal, YouTube search Turkey Porchetta and Turkey Roullade. It's de-boned Turkey meat wrapped in its own skin then slow cooked and fried or seared to crisp the skin. The Porchetta will get made with the Breast meat and the Roullade with the Dark Meat and Tenderloin. If you want to make it more interesting, wrap the Porchetta in Caul Fat before you wrap it in skin. This is as good as Turkey can possibly be made and won't ruin a Rib Roast

I like the idea, but I wouldn't use s good cut of meat. I go with a roast or stew meat.

I concur, that this idea will not help the turkey, and will hurt the prime rib. Do them separately and serve them together, and you'll have 2 winners.

But- I don't understand the turkey hate from so many people. Cook it right, and it is juicy, tender, deliciousness. I think the answer is simple here: Learn to cook a better turkey. I've cooked a few hundred turkeys (literally) over the last 2 decades, in quite a number of ways. They can be amazing on their own, and I love eating good turkey.

I find that people complain about "plain dry meat" or "boring white meat" just haven't ever tasted the pinnacle of a what a turkey can be. Sure, it may take a little extra to get it there- but the same is true of a brisket: and we don't throw those away

And most people eat crappy food like Taco Bell, McDonalds, and Jack in the Box tacos and think its good...

Turkey doesn't suck- people's way of cooking it may suck. People eat much more turkey than you think, they just buy it at deli meat counters or in pre-packaged packs and put it on sandwiches. Its an effort to cook a good turkey, that's why most people don't do it. Same reason most people don't cook briskets, ribs, or even steaks (to a lesser degree). People eat loads of chicken- not because it taste's better, but because it's just easier to cook.

Just my .02 worth of opinion
