How long do you want to ignore this user?
So, Steve Rinella is on JRE and talked about how Javelina can be tasty and is good in sausage. Has anyone had it? Thoughts?

Side note: I love JRE, but sometimes he really isn't as knowledgeable as he plays up. I think on moist subjects he has a thin veneer of actual knowledge - just enough to bring the idea up. For example, he really irks me when he proclaims to be a hunter but doesn't know the difference between a wild pig and a javelina. I swear he still thinks they are the same animal

Have tried it multiple ways.

The guy's schtick is to make every meat edible- which isn't the case. Any normal human being isn't going to like javelina nor be willing to go through the steps to make that stanky, putrid animal a meal.

They are fun to shoot, not fun to eat. Maybe postwar Armageddon people would stoop to eating them but there is no reason for anyone in a developing country to eat a javelina.

You will ALWAYS have someone, somewhere (probably Louisiana) say that "X" is delicious- "you just haven't had it cooked right"...from Buffalo carp to javelina. It doesn't make it true.

I tried some a long time ago. A friend had some in a big pot of chili. Couldn't really taste it over the chili seasoning, so probably not a good case study.

Listened to the same podcast. Joe's a shooter. Not a hunter. He practices shooting. Not hunting. He uses a hunter, like Dudley, to get him into a position to make a shot. On his own, he'd be helpless, and/or wildly unsuccessful/inconsistent at best. People take him places (like Tahone ranch, Alberta, etc.). He follows them in the woods. They get him into position, and he is able to make the shot.

Javelina tastes fine as long as you take care to keep the hair off of the meat. And never puncture the stink gland.

a lot of good hunters would be lost if dropped in areas they are not used to going after game they are not familiar with.

from what i have heard, he seems to stick up for hunting and fishing so i dont mind him.

So anyone who hunts with a guide isn't actually hunting at all?

Shoot sows, be super careful not to let the hide touch the meat, pull back straps and cook like pork. It's fine. I've served it to people who thought it was pork. I don't mess with often, but it can be ok.

Are you familiar with Rogan at all and his hunting background - because that's not what I'm saying.

But to answer your question, if your sole experience is going out with a guide, and never doing any of the work yourself. No scouting. No prep. No leg work. Just go to the range, shoot/practice and show up and expect to led around like a puppy, then no, you're not a hunter in my book.

This. We used to shoot them and take them to one of the hands my dad worked with on a regular basis. Him and his wife would make some kickass tamales out of them.

I get it. I guess the differentiation for me is whether you are "hunting"...or a "hunter".

My wife goes hunting. She's not a hunter. Not yet anyway. Same with my kids. I'm also talking large game in this sense. Elk. Mule deer. Etc. Joe's a bow hunter (for context).

I can't speak for it myself but my ranch manager grew up in Zapata and basically lived off the land. The meat in his household primarily consisted of deer, javelina, and rabbits. He has told me numerous times that javelina is very good in tamales, tacos/guisada, and some form of dried meat they used to make that sounds more like biltong than jerky.

The hide of any one I shoot will be saturated with Raid! in addition to stank.

My old engineer, Manuel, could cook it into a carne guissada that was tasty. He was really careful with the cleaning and cut up. Of course, it was deer camp.....

Javelina slow cooked in a Dutch oven is awesome. Throw some citrus and apples in there is really good. Like most things, you gotta keep it clean when skinning.

There was an episode of meateater tv show where I believe a woman that was a cook at a ranch they went hunting on in Mexico made them chorizo out of javelina. Might be what he was referring to.

Look, joe rogan is far from perfect. I think with the array of guests he has, he manages to hang in pretty well. I thought a javelina was a type of pig until a couple years ago.

He's a good ambassador for hunting; as someone that never hunted, wasn't sure how he felt about it, went out and did it and changed his view of what hunting is. He's only been hunting for around 5 years. Think about how many times most people hunted with their father or someone else before they went off on their own.

Separate note... anyone that eats Aoudad Ram, can keep their recipes and horrible palate to themselves.
