How long do you want to ignore this user?
Just moved to the Belton area and am looking for a place to drop a couple deer off. I've heard Miller's does a good job and is relatively inexpensive. Also had somebody tell me Schoepfs does good work.
Anybody try these or any other suggestions between Austin and Temple

I take mine to Hudsons in south Austin. The deer chop steaks are delicious

I live in Houston...the little deer hunting I do is out near Abilene. Drive takes us thru Austin...which is where I used to live. While there we found Hudson's. Now, even if I have to drive out of the way a good bit to drop it at Hudson's I'll do that.

they have the best jalapeno cheese links we've found anywhere!!!

In fact, just dropped a deer there on way home after thanksgiving....well worth the drive/time back to pick it up!!

I've used several around Austin.
Miller's has very good sausage, and I usually bring one to them. I prefer their summer sausage over all the others I've tried.

As already said, Hudson's makes an excellent chopped steak. My whole family loves them. I like their Italian sausage and brats too.

Johnny G's in South Austin makes really good dry sausage, but you have to get a bunch (I think their minimum sausage order is 25#).

The Buck Stops Here is where I used to go. I think the Hudson's Guy bought them, and supposedly brought the same recipes, but their chopped steak wasn't as good when I tried them after the sale. Good smoked sausage though.

Closer to you, I've heard Green's sausage house in Temple is reallly goo, but I haven't tried them.

This year I'm doing my own for everything, which I've really enjoyed so far.

I always used Miller's before I started doing my own processing. They're very good an affordable if you just need basic processing.

L&R is worth the money if you want to get into sausages, but you can easily spend $200/deer there.

L&R isn't doing processing this year because they are moving locations. The guy that used to do all the processing at L&R is now in charge of Schoepf's.

Another vote for Hudson's on South Congress.
Expecting a call soon to pick up 56 pounds of chopped steak. Yum!

Green's in Zabcikville (must be skinned) or Rabroker's in Westphalia.

I have always used Hudson's as well. I think their sausage is great. I know they batch their deer, but I haven't had an issue yet.

Wasn't aware they weren't doing processing. I did hear that they were bought or by someone recently. Hopefully their meat quality doesn't suffer.

Yep lost a back strap the last time there. Learned my lesson on being lazy and not quartering my own deer. That won't happen again.

But the jalapeo cheese sausage is money in my family. It's the best Christmas gift I can give them.

Edit: there summer sausage is good too

Went to Schoepfs market the other day for breakfast and grabbed some snack sticks while I was in there. They tasted and looked the exact same as L&R; makes sense now

Haven't taken a deer there, but if it's half as good as anything from Green's meat market you probabaly won't be disappointed. Can pick up a dozen kolaches on your way out too.

What is this Chop Steak stuff you guys are talking about at Hudson's? Maybe I should try some when I take another deer this year.

I just got my deer back from Green's. Brought it to them quartered up and any other meat I could cut off of it went in the cooler as well. I kept the better parts of the backstrap. I got half regular and half pepper jack sausage. Cost me $320. Receipt showed 90 lbs at $2.80/lb, $24 for the cheese, and a $48 processing fee.

The pepper jack is some of the best deer sausage I've ever had. If you like their sausage and cheese kolaches you'd love this stuff.

The chopped steak is ground deer and pork wrapped in bacon. Similar in size and look to a filet mignon. Just throw it on the grill and enjoy!

I heard Miller's wasn't doing it this year but I could be wrong.

We take ours to Greens in Zabicvill which is just East of Temple. I love their sausage. They do a great job.

Bring em in skinned by the way.

Millers was still processing deer in October at least. My dad took one then. Not sure if that's changed since.

I heard the same from a coworker and their website and Facebook say permanently closed. I may take one one to Green's and one to Schoepfs. For those that have been, what's the usual turn around time at Greens?

I dropped mine off the Friday after Thanksgiving and they called me this Monday saying it was ready.

Mine was probably 10 days. That's Greens.

Greens is different than say Slovacheks or Hill Country. Those come back fully cooked so all you have to do is brown it. Greens isn't. You have to cook it. But it is, IMHO and the opinion of my 6 year old boy and 9 year old girl, the best sausage out there.
