I used american fish taxidermy for a salmon mount. Was 6 years between when I caught it and when the mount was made. You just need as many pics and measurements as you can possibly provide them (length, girth, etc). The more info and pics, the more spot on your mount will be. The artist even called me before starting to see if there was anything special about the fish I really remembered/liked. This way, the mount really reflected MY memories of the fish. Was very reasonable priced for painting both sides, I think I paid something like $13 or 14/inch, but this was years ago. The paint job is fantastic, I have been very impressed with this mount. Fiberglass replica is the way to go in my book.
The fish is currently mounted pretty high up on my wall, and I don't want to pull a ladder out to get a good pic. These pictures really don't do the detail any justice. But the fins are all translucent (like natural), the mouth has a ton of detail, and all of the spots, scrapes, and scars the fish had are all hand painted on very well.
