I know certain cuts taste better than others, but in general how would list the above species?

I love how only blackbuck says "never had it" but the 3 below it don't.

Whitetail is better than a Sirloin steak to me. I could live off of it for the rest of my life.

Venison served at restaurants is most likely Axis or Red Deer (Elk) so that tells you pretty much everything you need to know.

Whitetail vary by location. I grew up eating whitetail Venison mostly from upstate NY or Kansas and it was much better that what we have in Texas

I have heard the exact same line, word for word from my brother in law. Good for you guys I guess. I prefer my beef.

I'm not sure what to make of it. I'd rate my beef steaks as follows

NY Strip
Ribeye
Hanger
Filet
Flat Iron
Loin Flap
Flank
Sirloin

Yeah, I guess I'd rather have certain cuts of Venison over the most run of the mill steak you get off a cow too

Umm I would much rather have a whitetail (doe or buck) than a large hog (100lbs +).... smaller pigs, yes.

Blackbuck???? Not sure I have had any that wasn't overly gamey. Well beyond whitetail.

Not sure if ever tried it before but the next whitetail you kill, process it with beef into hamburger meat. Even add a little bit of wild hog with it. You will never want to go out to eat a restaurant hamburger ever again.

Love it.

I just picked up 225 pounds of elk steaks, various types of sausage, ground meat, and jerky from Miillers in Llano.

In my opinion the steaks taste is a 40/60 combination of beef and venison, respectively. Much milder than white tail.

Had a pronghorn ribeye once and oh ma ga, best steak ever. Better than elk, which I thought was impossible.

Not sure where you guys are killing your speed goats but they are being way underrated on this thread. I killed my first last year in northeastern New Mexico and it has been outstanding.

I'll throw in a wildcard... where do y'all rate Sika?

People that actually eat them and not just shot and smelled one.

Sika is good. I've had a buck and doe processed and both were superb.

Make y'all a deal, since you rate aoudad so poorly, you can send it all my way. I'll take it off your hands.

Heard Hank Shaw talking about this on the Joe Rogan podcast. He thinks most Antelope are not processed properly and that they are generally "hot" animals (hotter body temperature?) that are generally hunted in warm to hot weather. When he shoots an Antelope he get's the meat out from under the skin as soon as possible. Thinks way too many hunters treat it like a deer back home in the midwest and maybe field dress it right away but don't skin/quarter until hours later. Says this is why there is an opinion in some circles that antelope meat is poor while others love the stuff.
