Hard to go wrong with teal, as they have a naturally sweet flavor.

You can always do the grill wrapped around a jap with bacon.

I like to breast them out (cut breast meat off of the bone) and cook in a skillet with red wine and add flour to make a little gravy. Serve over rice with a side of black beans.

Salt, pepper, spices, sear each side for a minute or two in a hot cast iron in bacon grease no more than medium rare. Fry up a couple eggs too. Makes a simple and delicious breakfast. That's what I did Saturday and Sunday morning right after I got done shooting them.

Can grill them in the same manner over hot coals to no more than medium rare.

I use them for other recipes too, but it doesn't get much simpler than these.

whatever you do ... do not overcook. They need to be rare.

here are some recipes to look through.

Don't overthink the teal breasts. They do not need an elaborate preparation at all.

You don't need to marinate or brine them. Salt & pepper, then get a heavy skillet (like cast-iron) screaming hot with a little grease in there, sear the breasts for maybe 60 seconds per side (you want them nice & rare but enough to get a good sear). Then slice them diagonally and serve with sides like you would a filet mignon.

-Soak in buttermilk at least 6 hours and pat dry.
-Marinate them for an hour in Italian dressing
-Liberally salt and pepper.
-While you are marinating them, get a red hot skillet with a clean brick in it.
-put in 2 tbsp of olive oil to coat the pan
-place the teal breasts in the pan and place the hot brick on top of them until the teal look done (about 60 seconds)
-Throw the teal in the trash and eat the brick.

My favorite teal joke.

While I've never tried to eat a shoveler and can understand why those might not taste very good except in gumbo, I hear people say duck doesn't taste good when referring to any of the following:
-teal
-mallard
-wood duck
-gadwall
-widgeon
-whistlers

I'm convinced those people have no clue how to cook duck. All of those species are excellent. You can do the breasts as shown in the video above, slow-cook the legs, wings, etc. Fry up the heart, liver, and gizzards or use them in dirty rice. All are absolutely delicious.

Just don't overcook them.

I always point to this video from Anthony Bourdain's "No Reservations" where guys who duck hunt a lot claim they've never had wild duck that tasted good and all he did was simply salt, pepper, and sear medium-rare: How to cook duck breasts

Did spoonbill fajitas last year. Grilled rare and brined in soy for a day ahead of time. Turned out great.

Canvasbacks (in areas where there is lots of wild celery or sago pondweed) are regarded as the best eating duck. But all of the ones listed above are great!

Up in the panhandle they dry feed on corn, so that helps.

I think teal have the best natural flavor. Mallard and wood ducks are good. I used to hunt a lake in peanut country and the mallards had a really nice nutty flavor.
