Could I smoke a pork butt on one of those things? I was thinking indirect heat at one end with wood chips and the pork but at the other. BBQ experts, would this work?
You would need to use indirect heat method that will cut down your total cook area, but it can be done. I have a friend that used to smoke pork butts on a converted thick gas grill. He used bricks to help hold and regulate heat. I used a weber kettle for this before I gat a smoker.
Some of the best brisket that I ever had was done on a "pit" made of rebar, baling wire, and barn tin. If you can find a way to maintain temperature just about anything will work.
Its a product that delivers heat and smoke to meat. That's it. If you know how to use it, you can use a 40 dollar barrel, or a 6000 dollar custom smoker....product is exactly the same in the end if you know how to use it.
