Reheating a brisket

How long do you want to ignore this user?
I have a frozen brisket that is sealed in a plastic bag. I defrosted it this morning and would now like to eat it for dinner. What is the best way to reheat? An article in Texas Monthly says to put it either in boiling water on the stove or in a pan full of water in the oven with the plastic still on. I worry about cooking things with the plastic on. I'm trying to avoid drying the meat out.

Is it a Ziploc or vacuum seal bag?


I reheat most things in vacuum seal by dropping them in boiling water. Does great,

Although Ziplock says it wont melt till about 120*C, I have never tested it.

Fill cake pan with about 1/2" of water. Take brisket out of the bag. Put into cake pan. Cover with foil. Put in oven at ~215.

Or do the same thing with a pan on the stove and a lid. Always works for me

Did you seal the brisket? Most foodsaver type bags are food safe, so no worries there. And I have no issues at all with reheating food in a pot of hot water in a foodsaver bag. It's a great way to reheat your leftovers.

Vacuum seal bag, pot of boiling water = almost as good as when it's fresh out of the resting period in the cooler.

Is it a vacuum seal bag. However I don't have a pot big enough to put this in for boiling water on the stove. Ideas?

boil two pots of water, dump in 20 qt cooler with brisket?

What about putting water in a big roasting pan and putting it in the oven at 225? With the brisket inside the bag.

a) bathtub
b) hot water poured into ice chest*

*Note: do not use Yeti. Brisket will refreeze.

with a good boil, no more than 8-10 minutes I would think.

I leave it in until there is good and easy separation between the bag and the meat. 10-15 mkns for a large piece, 8-10 for something like a flat.
