Caught two huge ones yesterday. One on 15 lb test. I wanted to skin mount the bigger one, but felt it would be a sin to waste the meat. I was wrong...bull redfish has a consistency between spongy chicken and pork on the half shell. I regret not keeping the carcass for a real mount, but now I have to settle for a fiberglass mount and a nasty dinner

Yup, redfish that big are pretty much throw backs. Good for a good fight and pics but that's about it. Filet is way too thick to cook on the half shell. Those 24-26" redfish are the ones you want for eating.

Crabbers are claiming their hauls are way down due to the number of bull reds in the water. I don't think keeping your one per year is terrible but do agree that they aren't as tasty. OP may want to look into a replica if you're still interested in a mount.
