What store bought fish is most similar to speckled trout?

I absolutely love the taste of pan seared speckled trout, but ,being the lousy fisherman that I am, it is a rare delicacy for me.

My parents usually take my brothers and I out to eat for our birthdays, but this last year I asked if my mom could buy some fish instead so that I could cook it for everyone. I told her that I wanted her to buy the most similar thing she could find to speckled trout at the grocery store, and described to her what that might look like. She came home with steelhead trout.(facepalm)I baked it in the oven with a brown sugar glaze and it was great, just not what I was hoping for.

Yall have any ideas for something a little more like speckled trout than the typical offerings of tilapia,catfish,cod,etc...?

Flounder, red snapper and grouper are all fairly comparable in my opinion and probably in that order.

Not sure if those are sold in your fish market though.

Stick to wild caught, not frozen and American over farm raised, frozen or international.

Two big ass buffalo fish sitting on ice in an open air display in the seafood department. Right next to two red snapper. The buffalo had the red and pink on fins/eyes/mouth that fish get after two days of sitting in an ice chest of semi-cold water.

I laughed and choked back a gag.

I was waiting for Ursus to chime in and set us all straight. I'll admit that I've never tried buffalo. But I do have a fondness for gaspergou.

Gaspergoo is not a bad alternative if you mix it with white bass filets. You can tell the difference, denser meat

Gou grilled on the halfshell is the sheet. Comparable to reds and black drum prepped the same way.

The small ones are great fried.

black drum fillets are a good substitute, the chinese market in sharpstown had the real thing in their fish market yesterday.

Flounder, imo, is nothing like speck. Unless fried. But flounder again, imo, is best when scaled, gutted, and blackened or broilled.

When mixed in with the rest of my catch it's hard to tell the difference.

I agree flounder is too good to fry, but the taste is pretty mild in my opinion similar to spec.

I think black drum has much more flavor than a spec, but I guess people have different tastes. I know they substitue black drum for specs and reds quite often in New Orleans restaurants and get away without people complaining.

My list of common gulf saltwater white meat fish (no mackeral, tuna, AJs, etc) would go something like this:

1. Flounder
3. Snapper
4. Grouper
5. Mahi Mahi
6. Spec Trout
7. Redfish
8. Black Drum

I took out some of the less common, but also great eating if you come across include Pompano, Tripletail, Sheepshead.

Any of those listed that you can find in the market can be cooked almost anyway you like and turn out very well.
