Help OB: mild chili that doesnt suck

Well, I did it again OB. I made chili and despite laying WAY off on the chilipowder, as in just a dash, it was too spicy for the wife. I can't figure out how to give it flavor and body and still keep it reasonably mild. There's something I'm putting in there that gives it a fair amount of heat without even adding much on the chilis side.

Anyone have a chili recipie that is more on the mild but flavorful side? I'm not talking hot dog topping chili, but something with some body and flavor that's light on the spicy hot side. I don't care if it isn't "authentic". I'm just aiming for it to be hearty and flavorful without being very spicy.

Skip the chili powder and use rehydrated ancho chilies. They aren't hot. You will want to add some cumin and Mexican oregano, since that is typically in a chili powder blend.

Add some more tomatoes, tomato sauce, and/or tomato paste.

I tried more tomato this time, but then it has WAY too much tomato flavor for good chili. I'm missing something that adds flavor without much heat.

I think I'll have to use regular diced tomatoes instead of rotel with green chilis.

Here's my recipe. Lots of flavor and the heat is easily adjusted by omitting or lowering the cayenne powder and chili powder. We like a little heat but not too much as we have a 3 year old and 1 year old, but my husband usually adds some Tabasco to his for more kick.

Give it a try.

2 lb ground chuck
Chopped onion to taste
1 bottle Shiner Bock
1 big can of 100% Vegetable or Tomato juice or blend of the 2 (46 oz?)
1 can tomato sauce
1 cup water, if more liquid is needed
Diced tomatoes (canned or fresh)
Salt and pepper to taste
Few splashes of Worcestershire sauce
1/4-1/2 tsp ground cayenne powder (adjust up or down to taste)
1/2-3/4 tsp oregano
2 tsp ( about 1/3 - 2/3 palmful) cumin powder
3-4 Tbsp chili powder
3/4 tsp sugar
Pinch or 2 of ground cinnamon
1/2 to 3/4 tsp chopped dark chocolate
1 can black beans, rinsed and drained
1 can dark red kidney beans, rinsed and drained
1 can chili beans ( don't rinse and drain)

Cook beef until almost brown, drain. Then add beef, onions, and beer and cook til onions are softened. Add everything else and simmer as long as you want/need. Adjust seasonings to taste. Top with sour cream and cheese. Even better the next day.

We put some bell peppers from the garden in ours. They were red, yellow and green, so its looks pretty good as well.

However, we are both from south Texas, and we make our chili with cayenne, serrano, jalapeno, new mexico, and ancho. If my wife couldn't handle spice, she wouldn't be my wife.

Have you tried a few wedges of Mexican chocolate? I put some in a batch a while back and it tasted great but ended up too mild for my tastes.

second the Chocolate, unsweetened powder. i use dark...

also, try some smoked paprika. adds a nice smokey flavor with no heat.

Thanks for the tips. I use a ton of mild peppers like bell peppers for color and nutritional value, so I'm already doing that.

Need to see photos of the floor model. Perhaps the external curb appeal can overcome any limitations in the internal machinery.

Cut your chili meat with sausage 50/50, chocolate is a good one, more cumin & paprika, fresh crushed garlic

I am 100% German, but I love me some hot food. My grandparents were born in Germany, but my Grandpa can eat my habanero chili easier than I can. Don't go putting this on the Germans!! ...Even if they do admittedly like heartier (and not spicier) foods.

5lbs hamburger meat
4 cans diced tomatoes
1 cup ketchup
1 white onion
5 packets of wal- mart brand chili seasoning
1/2 cup of oatmeal
Salt, pepper, garlic to taste

My dad and I both love chili but as we've aged, we decided we couldn't take the heartburn that went along with it. We decided to come up with a way to make something that tasted about like ranch style beans. Those don't beat us down too bad.

Here is what we came up with. You can change the beans to meat and adjust the chili powder a bit to taste.
