How long do you want to ignore this user?
Ive always heard you are not supposed to eat jack rabbit. Mainly because of rabies. Is this the reason? Ive always been tempted to cook one. Is it safe to do so?

Its safe, but it was the toughest thing I have ever eaten. Just shoot an armadillo, they are much better.

I would definitely recommend slow cooking a jackrabbit in some sort of braise or stew. Cook for a long damn time over low heat.

Low & slow can make even the toughest meat tasty.

When my dad was young they would make chili out of them, off course they were poor and it was during WWII.

Food snobs A jackrabbit (actually a hare) that is not a senior citizen is fine for eating. The older ones do need a little finesse (grinder), to convert to chili meat.

My dad ate them growing up in the depression. Asked him onetime why there were so many more jackrabbits than cottontails in the west Texas area where he grew up and he replied "cottontails are more tender".

On a recent episode of Meateater, "Clash of the Titans", he is hunting for pigs and rabbits.

The guy he is hunting with, I think is a chef. Anyway, they cook jackrabbit and he said it was great. Now, the way he cooked it could have made shoe leather taste good, I don't know.

It airs again tomorrow morning (Saturday) at 10am on the Sportsman Channel.

Nevermind that, with 30 seconds of google work, I found it.

During WWII, there was a POW camp in Hereford, Texas for Italians. They would work on the surrounding farms.

Late in the war, food rations were cut in retaliation for German mistreatment of our POWs. While the POWs were working in the fields, the guards would often shoot rabbits for the POWs so they could smuggle them back to camp to eat.

So basically I'm saying if I was starving to death in a POW camp 6,000 miles from home....

...I might eat jackrabbit then.

Cook it on a cedar plank. Then throw the rabbit away and eat the cedar plank, you'll be better off.

Never tried jack rabbits. Ate our family show rabbits that didn't pan out numerous times. They were delicious, but they had been eating the fancy rabbit food from the feed store

Surprisingly, I've never had jackrabbit (that I know of - who the hell knows what goes in Chinese food and tamales).

Swamp/cottontails are a different story though. They are best in a stew type dish as the meat gets really dry. Tasty, but dry.

I cooked one up in a stew last year. I'm not saying it was good, but it certainly wasn't bad.

I've shot the red West Texas dirt right behind quite a few but I've never tasted jack rabbit

Ive eaten a few jackrabbits over the years. Battered and fried definitely isnt the way to go. Not a bad taste really, just tough as hell. Had it a couple times frickaseed (sp?) and it was pretty dang good, cooked by my granddad.

My granddad grew up dirt poor during the depression. He used to tell me stories of eating a wide variety of critters that would make most of yall gag, except probably for Ursus.

He cooked a lot of these same critters for us as I was growing up. And most of them weren't that bad at all.

Some, however....were.

Cut 2 green apples,1large onion,1lemon with rine, into spears. Stuff all into rabbit dust outside with tonies wrap with cheap bacon put on pit for 3 hrs about 275-300 then enjoy.

When I was a kid, I killed a jack rabbit that was still rather young, a little larger than a cottontail. It tastes like cottonta when we fried it along with the other rabbits. I never tried full grown jack rabbit.
