This is the one I have found to be most enjoyed by my guests. Seems like this recipe makes about 15-20 puppies. I use Camp Boss seasoning, but I'd bet any Cajun seasoning (salt and cayenne) would work about the same.
1 cup yellow corn meal
1/2 cup flour
1 tsp baking powder
1/2 TBSP Camp Boss seasoning
1/4 cup sugar
1/4 tsp onion powder
3 ounces milk
1/2 egg (this is a half recipe, I use a whole egg anyway)
1/2 onion, finely chopped
3 green onions, chopped
Spoon about 2/3 of a tablespoon of batter directly into 350 degF oil and deep fry for about 3 minutes until golden brown. Make in batches that will allow you to keep good control of your oil temperature. If oil is too hot, the puppies will be very dark. If oil is too cold, they will not brown adequately and may be gooey inside.
I use a small scooper with a spring action discharge wiper to make quick work of the introduction of the puppies into the oil. It looks something like this.
