How long do you want to ignore this user?
So i've got some 2 inch beef fillets I'm cooking for my dad's bday tonight. I forgot that my mom and dad like their steak well done. I like mine medium rare. I offered to butterfly their steak so it got done all the way through but not burned (although to me well done is burned for a good steak.)

Do you just cut it in half length wise except for a small sliver to keep the 2 halves together?

the way I've always done it is cut it at 15.5% degree angle against the grain 1/4 inch from outside edge. That tends to preserve the flavor and texture.












seriously man, it's just a piece of beef, saw the f'er in half.

Nice had not thought of that. I know it's just beef, but it's my dads 65th and sorta celebrating his retirement too so I wanted kind of a nice presentation too. That would be cool.

If you're going to ruin a perfectly beautiful piece of beef by burning it through, who gives a **** how it's cut?

My two kids like theirs that way too. Kills me every time...

The fact that he is alive, well and celebrating b-day and retirement with his kids; he won't even care care how his meat looks.
