I was given a 270# show hog that didnt make the auction at the travis co livestock show and am headed up to Austin Monday to pick it up. Where is the best place to drop it for processing? No sausage, just retail cuts/hams. I want it done right, as these don't come along too often :-). OBTW, somewhere in New Braunfels, SA, Boerne or Kerrville

I would feed it for a little while to get over the show stress and clean out any show day products they might have used. There are enough Germans down in that country, they are probably all good.

My grandfather ranted raved about Granzine's products while he was alive. I don't know that he ever took anything there for processing, but he sure loved buying from them.

I grew up with Mike Schott and have used him to cut up several show pigs in the past years.

His place is northwest of Helotes. You could keep going north on Hwy 16 (Bandera Rd) and hit Hwy 46 to cut over to I-10 if it is any shorter than going all the way in to SA.

Granzines said that no one in the area custom killed until the second or third week in February. We can't wait that long, show was week before last and they're tired of feeding it :-). Talked to Woodburys in Ingram and Daryl said I could drop it off Monday evening. I have used them before on some dried sausage with good luck, so hopefully they will do a good job on this.

Dzuiks in castroville or Wiatreks in Poth would be the next two on my list. Wiatreks can make some rediculous bacon for you. I can't remember if penshorn in Marion had shut down/burnt down something .

Harvest house in Johnson City or Dutchman's in F-burg. I have a show hog at Havest House now getting processed.

If you are talking wild pigs, they must be novelty to you North of I-10.

Down South of it, nothing short of Claymore Mines could put a dent in their population. I could shoot, and eat until my gut burst on their meat and never make a difference.
