Smoking ribs on a charcoal grill?

using the same method for some time now and just curious as to other ways?

I use indirect heat by filling one side of my pit with charcoal and wet wood chips, next to that I place a pan of water. I then place the ribs over the water and "smoke" for about 3 hours at around 250 degrees spraying the ribs with apple juice every now and then. Then take the ribs off and wrap in foil adding butter, brown sugar, honey and BBQ sauce...let "smoke" in foil for another 2 hours. Finally take ribs out of foil and "smoke" over the water pan for another hour brushing BBQ sauce on the ribs 2 or 3 times.

Again I have always used this method and it works fine but Im just always looking for new ways to do things.

I guess ultimately my method is pretty much the same in the end, but here goes.

Apply favorite rub to ribs, place them in a large baking pan, add about 1/2 inch of apple juice, cover with foil like a tent, seal, and bake in the oven for 3 hours or so @ 250 degrees.

Remove to grill, indirect heat also @ 250. I put the same apple juice in a loaf pan and place on the grill over the coals - add as necessary to keep it from evaporating dry. Moisture plus flavor in the apple steam. Apple chips on the coals for smoke. This for two hours or so.

Remove from grill, wrap in foil and rest for half an hour. Ready to eat.

I never cook with bbq sauce - but that's just me. Add to taste if you like it. I use Bad Brad's sauce from Pawhuska, Oklahoma and mix their hot and mild together to taste.

I'm handicapped by currently residing in an apartment. When I get moved back into a house I will use the grill exclusively, but the combination of oven and grill does a darn good job. The trick is to keep the moisture level up - nothing worse than dried out ribs.

thanks for the info...Ive never tried putting another water pan on the grill over the coals but I really like that idea with the apple juice.
So do you still place an additional water pan under the grill next to your coals?

No water pan, just the apple juice. It wouldn't hurt I guess, and maybe you wouldn't have to tend the apple juice pan as much.

I suppose using your method you could just substitute apple juice for water - I think I'd rather try that than using two pans for moisture.
