We just purchased a Kenmore grill with the infra-red searing burner. I think it works to nicely sear both sides of the steak then move it over to a regular burner to finish cooking. I'd buy it again.

Infrared sucks. If you don't want it flame kissed, then just bake it in the oven.

People who start with refrigerator case meat, generally over-season it, and think just because it is a Ribeye somehow makes it something special.

See the sear-in comment above. It's a factually incorrect statement that is regurgitated over and over because some marketing agency figured out it resonated with customers

I agree with drive on. Even Alton on Good Eats said searing in flavor is a myth. I do sear some steaks because I like a crust on top and bottom, but that is usually cooking one inside. Outside I will do about 4 to 5 minutes on both sides with a hot coal fire and that's about it.

I dont buy that. It may be a matter of personal preference or even technique but my observations are that you can control how moist the steak is better with an infrared. Cooking with an infrared gas grill would allow me to put mesquite log on it on one burner amd turn it all the way up adding mesquite flavor to the meats. I had mesquite coals in a matter of minutes.
