Jackfish recipe?

How long do you want to ignore this user?
I was working in Rockport this week and bought some fillets and shrimp before I left this AM. Guy said it was jackfish, I was in a hurry and assumed amberjack, but doing an Interweb search, it may be Crevalle, which doesn't have much of a following. Any recipes, blacken? Thanks

If it's jack crevalle it's only good for shark bait. If amberjack, tempura it up and fry!

Amberjack and crevale should be able to be identified by the meat.

I think Jack C is red meat, while amberjack is white meat.

If it is jack C. throw it away.

Jack C can be edible. I knew this cajun coon ass that showed me how to cook it. He soaked it in buttermilk for about 6 hours, the rubbed the meat with oil and seasoned with your basic cajun spices. Then place meat on the grill until fish was done. Melted some butter and cut some fresh lemon slices. Served with cajun red beans and rice. It was good. I would of never thought so.

You can make most fish decent with the proper preparation.

Still, the best use for jack C really is to catch big sharks.

Feed your cats with the Jack if it's JC. Other folks are correct regarding the meat color. The oil content in the JC makes the meat a darker red color where as the AJ is going to be whiter. We use JC for shark bait only. If you do opt to eat it, make sure to have a 12 pack of Ultra to wash it down with. ;-)

FWIW,

I've had a TON of poeple tell me that king mackrel sucks, and I've found that if I trim off the dark red flesh, don't freeze it, and marinate the crap out of it in vinagrette overnight, it grills up deliciously.

Mouth, mackerel is really good, grilled fresh without the red stripe of meat like you mentioned. But it's not an oily fish, i guess i would try Jack C but, ugh.

Last offshore trip I took, the group I was with kept asking for a dolphin rig, so we could catch the ever elusive flipper. It was a running joke for hours... I think we were driving the deckhands crazy (they kept telling us no, and I'm pretty sure they were thinking 'not sure if serious').
