Anybody have some good recipes for Alligator?

It's one of my favorite foods, and I normally get it in restaurants in Texas/Louisiana, never bothered cooking it myself, but no restaurants in Kentucky or Ohio offer it.

But I recently found a store in Cincinnati that carries gator meat, and I'm looking for good recipes for it.

Also, is there anything in particular I need to know about handling/preparing alligator?
