Looked for one in the Outdoor Board Recipe book and the "stickied threads"...didn't see one.

Anybody have a good recipe (for backstrap, chicken fried steak, etc)?

Use about 4-5tbls of the oil used to fry said meat, add flour to absorb oil, cook roux for a minute to cook raw flour taste out, add milk to level you want, stir consistently to break any lumps that might be there and get up brown bits of bottom. Simmer till thickened, salt, pepper, profit.

Follow-up-- sometimes it may take a little more oil or additional flour to get a good roux, it'll look like a soft paste, just play with it.

I didn't know that is what that is called. I just thought it was meat grease gravy. The only method to make gravy for fried meat.
