Help! Smoking Chicken

Yeah ok, so I forgot to post this earlier. So it seems that a group of are smoking brisket/ribs and whatever meat we can fit in the smoker. I've got 2 whole chickens I want to throw in there.

Whats the best way to smoke these bad boys? How long?

Rub Tony Chiceres (sp?)on bird and stick a half full beer can in cavity - 3-4hrs later,beer in the butt chicken. When you can spin a wing off the bird with 2 fingers,it's pretty much done. Don't drink the beer though,you'll know why when you're done cooking the bird.

Try the patch or nicotine gum. The most important thing is she have a support group to get through it.

Smoking time completely depends on the smoker temp. Assuming 225-250 you will probably need to smoke them for 3 hours or so.

I make a rub with salt, pepper, paprika, garlic powder, smoked paprika, and ground sage.

Beer can chicken is the gateway! It's so easy to do and you really can't mess it up. Cover the outside and the cavity with your choice of rub or seasoning salt and be sure to rub some between the skin and the meat too. Some people will even throw the chicken on the grill for a few minutes before they smoke it to get a crispier skin.

Beer can chicken!! Rub the chicken down with mustard and then season with pepper, garlic powder, onion powder, and salt.

Butcher them first. That way you can pull the breast off the smoker when it is done, and leave the legs and thighs to finish cooking.

I've found that the chicken "smokes" better beer-can style around 300 degrees around 2 to 2 1/2 hours (need internal temp of 165-170). However, your ribs and brisket need around 225 for a much longer period of time.

I would think that the amount of time to bring the bird up to temperature while smoking around 225 degress would result in a very dry bird, even beer can style. Any comments? I would like to do brisket/ribs/sausage/chicken combos at the same temperature and adjust the timing into the smoker accordingly to finish up around the same time.

The chicken is firmly for smoking and didn't want to try the patch last night.

I'm not a complete idiot with smoking & cooking - I'm a ranchers daughter so I can cook AND grill. So the smoker is sitting right at 225-240 depending on the hour.

I brined the chick's last night with spices and made my own rub this morning. Little brown sugar, cayenne, pepper, salt, paprika, cumin, garlic powder, onion powder, ground chipotle pepper, oregano and thats about it. OMG it tasted so awesome. So they each went in with 1/2 a beer can.

We'll see how they do.

Not even close. The chicken will be perfectly moist if cooked at 225 with a beer can shoved up its ass.

Brine + Beer can seems like overkill. Let us know how it goes.

I threw them in our smoker at 1145 and I took him out about 3.

All you need is steam, you don't actually need the beer to boil.
