My idea would be a product that is readily available at H.E.B. or Kroger's, not super fatty, has no soy or other fillers, and is not so finely ground that it comes off like mush. Any recommendations would be appreciated. Thanks.
Try this ( at least you'll know what's in the Chorizo!) 1) Add about a tablespoon of vinegar to 1/4 tube of Jimmy Dean's or Owen's ( whatever whole hog patty sausage you want). 2) Add Comino and Chili Powder to taste ( more than you think - til the color is right). 3) Chili's of choice ( preferably Pequins)
Mix it all up in a bowl then fry. Great wiyh eggs! I love Chorizo! I just don't like the offal that is used to make it in most places!

I have settled on Garcia Chorizo Fino from HEB. Grew up with a mom that made chorizo and eggs with some regularity. Used to butter Grandma's tortillas and eat them faster than she could put them on the plate. A third of a link of the Chorizo Fino makes a pretty good mix with 2 scrambled eggs and an HEB Homestyle tortilla.
