Good Marinade for Fajitas

How long do you want to ignore this user?
Going to grill some fajitas tonight..not my speciality..anybosy have any suggestions for a good marinade and/or sauce?

Dont know if its an option for you, but the best fajitas I have made are the pre-marinated ones from HEB or Central Market (if you live in Dallas). The beef and chicken are great.

Victory, I see you're in Dallas so you'll have to get them at Central Market because we dont have HEBs up here (which sucks).

that fiesta fajita seasoning is great

Fajita Marinade

½ lb melted margarine
1.5 oz lime juice
5 oz Worcestershire
5 oz soy sauce
2-3 oz garlic, finely chopped

Mix & light boil.


Or yeah, the HEB brand.

Bugchick has a decent one. Lime and worchesterwhatever sauce should be involved.

Mine is pretty simple:

1 cup water
1 cup pineapple juice
1 cup soy sauce

Marinade overnight.

I do it one of two ways

For fajitas, I just combine olive oil, Fiesta Fajita Seasoning, and worchestershire. Dump it and the meat in a bag and let marinate for about 1 hr.

For carne asada tacos, I make a chimichurri sauce and let it marinate for about 3-4 hours. This is a much different flavor, and I serve it sliced into smaller chunks on corn tortillas with pico.

One key to good fajitas is trimming the meat and proper slicing. The extra effort to remove the silver skin makes a world of difference, and always slice against the grain.

another good way that is different, but tasty.
we have a wok and you cook em with bell peppers and onions and it makes a gravy while you cook em. mmmmmmmmmmmmmmm very tasty. not real fajitas, but good.

The Lawry's "Tequila-Lime Marinade" goes great with chicken and beef.

Uvalde Meats. The owners, Pat and Gail Jakowski, are ag friendly. I think they put a couple of kids through A&M. Great steaks, also.

If you are in B/CS or anywhere else that has a La Michoacana their marinade in great (as good as HEB is it is WAY better). They also sell it already marinated. There is also a liquid marinade that I normally get in Carrizo Springs, the brand is Lissi(sp) that is really good on fajitas, hanging tenders, etc... It looks like dirty mop water but tastes great.

flyfisher, I agree HEB fajitas are great .......................................................................... if your goal is to make sure to mask 100% of the flavor of the beef and only taste the marinade.

ummmmm MSG.

Either they have MSG or tons of salt. Has anyone ever seen the sodium levels on these things.

They are delicious, but only once in a while.

HEB fajitas are good, but I add Fiesta Fajita seasoning and then cook them on the pit with some good oak for about 45 minutes and they turn out exceptional. I have not had anyone complain about them for the last three years.

I cheat (a little). I use Stubbs Beef Marinade as the base and add a bunch of fresh lime juice, minced garlic,and pickled jalapeno slices/juice.

I used Viva Italian dressing as a marinade for years before HEB started putting out their own marinated fajitas. HEB is just too easy now, but the Italian dressing is great if you already purchased un-marinated meat.

It wouldn't be a TexAgs cooking thread without someone using beer, Italian dressing, or Tony Chicharie's(sp?) in some way. Honestly, there are other marinades and seasonings out there.

beer, italian dressing, yellow mustard. from one of my former mexican roomates. it may not sound that great but it is. i usually add some fresh lime juice as well, but thats a preference.
