Secret of Evermore and Super Mario RPG. The 16 bit era aged really well so these two still look great for what they are today, so they'd be more remake candidates over remasters.
I've been extremely lucky with remakes/remasters, Diablo 2 and Final Fantasy VII are probably my two favorite titles of all time and both got an incredibly well done remaster and remake respectively.

I've tried the XWAU Upgrade. It's been a few years, but it looked really nice. They also had a mission builder that you could use to make your missions.
XWVM's youtube videos look great and they have a Facebook page to follow the project.

I would jizz in my pants with an Ocarina of Time remake. As long as you keep it simple/not too many buttons to push/I'm turning into an old man type of game.
