Quote:

The truth about what New Yorkers really want to eat bit Eleven Madison Park on its precious, plant-based butt this week, with the announcement that chef/owner Daniel Humm's menu would no longer be exclusively vegan.

For 15 years, Humm ran the kitchen at EMP to global acclaim, earning three Michelin stars and a spot atop the World's 50 Best Restaurant list in 2017. Then, in 2021, he abruptly switched to a vegan menu.

It laid a big, fat egg - an item forbidden on vegan menus - with Big Apple critics, who ridiculed its three-hour, nine-course prix-fixe meal starting at $350 a head.

I order steak only occasionally, even in steakhouses. But to the chagrin of "save the earth" types who put animal consumption on par with war crimes, beef in many shapes and styles is the runaway favorite dish of New York's dining millions.

They want steak. More than Italian, more than Japanese, more than tacos. Just count the seats!

This restaurant owner realized the error of his ways and backed off his exclusive vegetarian menu when traffic fell off.

So now he's bringing meat back. As the NY Post writer mentions, meat is the most popular dish in NYC. Besides the many successful steakhouses that are thriving there, he points out successful Korean and Mexican places that also serve beef.

He also points out other vegetarian restaurants have closed shop recently.

Get woke, go broke.

Go veggie, lose your edgie.

Has a successful business - then decides to try to 'make a statement' and abandons what draws people to said business.

I'm sure the owner had fun starting a conversation, though. Probably had some conversations with workers and the landlord when not being able to pay the bills.

Decides to be a climate hero and takes the menu vegan.

Can't afford the beach house in the Hamptons.

Puts meat back on the menu.

After consuming some beef, he has more energy and participates in an anti-ICE protest.

Feels smug again.

Ate there last fall with my wife. It was awesome. Very cool experience and impressive what they could do while handcuffing themselves with the vegan thing. Will probably go back now that they're going back to normal ingredients.

Maybe they got Cracker Barreled before we ever knew CB was over a barrel.

Success and money sure seems to make some people stupid.

Oops, we are a FOR-profit business. Democrats sure like to break stuff that otherwise is fine and they do it everyday.

He's not un-woke, he's just doing what he can to keep his restaurant doors open by bringing real meat back that he can change more for.

It's your classical hypocritical libtardism when you abandon the progressive marching orders and rely on yourself but still spew whatever the prog overlords tell you to parrot.

This could have been an economic decision for meat is a lot more expensive than vegetables/fruit and as a high end restaurant, can charge what ever it wants.

However, the owner did not realize that vegans are a small minority of his customer base and the money he saved not serving meat was lost by decreasing clientele.

Got around to reading the article. Wow that was dumb. It was never a steakhouse, and his comparisons to the restaurants he listed are pretty idiotic. There's a time and place for a steak, but Eleven Madison Park wasn't losing customers to steakhouses. Also, $350 for dinner at a three Michelin star restaurant is pretty cheap comparatively.

There is only so much you can charge for vegetables... and it isn't profitable enough for NYC-Manhatten rents.

If you read the article, he's still a dumbass. He's not adding beef back - just chicken, fish, and shellfish.

He'll get some traffic back but not what he could get.

That's why I titled it "animal protein." But the author points out beef is king in NYC.

This.

Thinking that like-minded individuals who live on the fringe side of society (i.e. ,vegan AND woke) is more than enough to make a successful business is foolhardy at best. This is especially true of restaurants. Hell, it's hard enough for a restaurant to focus on one uncommon ethnic group's (Algerian, Croatian, etc.) food and survive. And those have all varieties of animal proteins.

This was a dumb move, period. Still, at least he was smart enough to go back to what works. I'm sure his staff are happy with the decision/

I have no use for a vegetarian restaurant, and apparently New Yorkers don't much either. Along the same lines here is one of my favorite T-shirts. I probably get 99% positive responses to it.

Oh yeah, I just finished cooking a ~2.5 lb. Top Sirloin steak on the grill, along with and a dozen foot long beef hot dogs from Sam's, some pork chops, and a 1.5 lb. link of sausage with Habanero Strawberry BBQ sauce. Yeah, no vegetarian dishes wanted around here, or worse yet to actually pay someone for vegetarian food.

Habanero Strawberry sounds interesting! I just grilled a couple Cowboy Butter shrimp skewers, Black Cherry Chipotle chicken breasts, and a couple ribeyes.

Yeah, the doubling down for a socio-economic group who's dining preference is limited to fruits and vegetables while posting up $350 tasting menus sounds like a recipe for disaster. I don't have hard data but I'd bet the typical vegan's annual income is heavily impacted by how much they earn in tips. $350 is likely close to their weekly tip pull at the local coffee shop. $350 for a menu that has zero animal proteins is bold, and apparently, not profitable.

This is so true, and well said. It reminds you of those socialist restaurants in Portland that were pay what you want for the meal. They didn't last long either.
