Because, I build way more complex devices and equipment than this "toy". I've got decades of EE knowledge in this field. Alexa could be a "mole", but I really doubt it.
Alexa could be listening to your conversations and storing/processing the "data" but I doubt it. Tests have been conducted on the Alexa devices and there is almost zero network traffic when the device is "idle". There isn't enough memory in the device to store audio waveforms or processing power to analyze the audio waveforms and convert them to small text files to be uploaded later.
Alexa is an on-demand device. She is a simple phone (for lack of a better description) that gets activated by saying "Alexa" and then transmits raw audio files to a server farm that responds to the requests/commands.
In theory, the account/device could be blocked or disabled if a person said a "trigger word", but the free Alexa toy puck isn't listening to you.
