My kitchen air has been replaced with pure O2 so I can have the cleanest cooking experience possible. It also dramatically decreases cooking time, particularly when my cooking starts at 3500F. Nitrogen in the air oxidizes with oxygen at temperatures above 2600F. Natural gas burns at 3500F. An open flame doesn't happen in a clean environment in a test tube.

No kidding. My lungs get real confused at times and just consume nitrogen vs oxygen.
Thanks for letting us know chemical reactions show no preference or pattern when reacting with certain elements.
The way we are handling it in NYC isn’t to force people to switch what they already have. Folks can keep their appliances, and new buildings in NYC will have gas-free stoves.
