She Talks to Angels sounds phenomenal in Open E, but I don't have time to retune completely for one song at any place I play, most of them being open mics.

just use a capo.. since open tuning is not a full bar capo, use one like this:

Lie in Our Graves and Shelf in the Room are both great.

I also like to play Over the Hills and Far Away, Mary Had a Little Lamb (SRV), and Neon (JMayer).

I could do a mediocre Drifting (Andy McKee) but I can't do the poly-rhythm thing nearly naturally enough to pull it off anymore because I don't try it. I had to play it EVERY single day for 30 minutes at about 40 BPM for a month before I dared try to play it for anyone else. Counting the bars in my head became such a beating that I got to where I hated the song.

For fun, my favorite chords. Can't use them much, but its great when can work them into a song. I thing it is a Gsus4/F (G suspended 4 with an F root/base?)

I no longer have two acoustic electrics unfortunately.

How does that capo work once you start finger other stings? Maybe I'm being dense, but it only seems to me that it would solve the problem for that one open chord.

just like a regular capo which can only be on ONE fret at a time, this can do one thing at a time. If you set it as x221xx, then you now have a guitar tuned to open E. problem solved.. right?
If you need another tuning, for another song, then change it... or take it off to go back to regular. look how easy it is to change:

"Willin'" by Little Feat is one my personal favorites to play, super easy too. Also, the acoustic version of "All I Can Do Is Write About It" by Lynyrd Skynyrd is great.

First song I ever learned was The Hammer Holds by Bebo Norman. Very simple, pretty song that I still play all the time.

I also absolutely love playing Man on the Side, No Such Thing, and Comfortable, all by John Mayer.

Other than those, it's always fun to play songs that use lots of open chords and alternate tunings. Even if I'm no expert, it's just fun.
