I make potato soup all the time. I usually use ham, but I've put in sausage and chicken before (erm also, I don't measure)
3-4 potatos, cubed, but not peeled (bite size)
1/4 - 1/2 bag macaroni noodles, any type
1-2 big carrots, chopped or a few baby carrots cut down (or as many as you like)
1-2 celery stalks (or not, as you like)
1/2 onion for flavor (to be removed later or put in cut up if you like to eat them).
1 leftover chicken quarter or a pound of hamb, or a package of little smokies (whatever you want, as much as you want)
Seasoning salt
a handful of instant potato flakes
1 cup or so cheddar cheese
milk
garlic
celery salt (optional, I usually leave it out).
pepper
Scale the ingredients based on the size of the pot you have - mine won't hold that much and I don't usually want that much so I throw two potatos in and have dinner for a few days. Anyway, boil the potatoes until fork tender, cook the macaroni separately, drain and combine both, toss everything else in the bigger pot, fill with milk until everything is covered, season to taste, cook until every thing's heated through on low/med low so the milk doesn't curdle - use the instant potatoes (or mash a few of the cooked potato pieces) to thicken the liquid.
