First, I know many of you, like me, are not gonna spend time/money to chase down complicated recipes like the NYTimes. So I offer this for your holidays if you are tired of turkey.
With just a few ingredients you can turn less expensive Chuck roast into a melt in your mouth melange of flavor. Key ingredients: red wine, beef broth, rosemary, thyme, garlic and root vegetables along with the beef. Let it go for several hours in a 300 degree oven until the roast literally falls apart.
We tried this on our tribe last week and and the result was fantastic.

Almost exactly like my recipe. A good pot roast is hard to beat.

A month ago I sous vide'd a solid cut of prime chuck for 24-26 hours. I think I'll just stick with that method.

I highly recommend cooking pot roast in a pressure cooker. In my experience, other methods are more likely to end up with at least some parts dry.

Very similar to how I do mine. I use a cast iron dutch oven. preheat the oven to tree fiddy. Sear the roast on both sides in a little olive oil. Remove the roast. Saute the chopped onions, add a cup of red wine and deglaze. Add a can of beef broth, 2 tablespoons of garlic powder, 1/2 teaspoon rosemary. Put the roast back in the pot add carrots. Put on the lid and slide it in the oven for 3 hrs or so. Too easy, and never dry. I like to serve it over mashed taters.

Instant pot with this:



I use sirloin cut into strips, and beef broth instead of water. Top the steak strips with baby carrots.
35 mins lid-on to lid-off. Cooks for 15. Warm up Bob Evans mashed potatoes in a pot.

My meat and taters wife loves it.
