We've been cranking up the office grill a couple times a week with great success and are looking for more ideas.

We've done the jalapeño/pepperjack/stuffed inside chicken and wrapped in bacon:


The same with dove:



Today I made "armadillo eggs" (stolen from the OB a year or so ago). No rule #1, but jalapeños/cheese inside a ball of ground sausage thats grilled and basted w/ BBQ.

What else can we make that's along these lines? I was thinking maybe something similar, but using slices of portabello mushroom instead or chicken or dove. Any other ideas?

I actually like steamed asparagus wrapped in bacon. I would never eat asparagus any other way.

pork tenderloin wrapped in bacon.

bacon skewers

stick then end of the strip on the skewer, add a tomato or onion or mushroom, skewer that strip over the veggie. Add another veggie or a shrimp, go back over the veggie in the opposite direction to create a wave pattern and keep repeating until the bacon is done.

De-vein the shrimp and place jalepno strips in the void. Wrap with bacon and grill. Im sure you could add cheese in there somewhere if you really wanted.

The armadillo eggs I know are jalapenos stuffed with cheese, wrapped in sausage, then wrapped in a crescent.

Deeeelicious. But not grill-able.

Sausages can be diagonally sliced and put in foil packets with peppers, onions, and potatoes.

Or wrap the sausages in bacon.

Hatch green chile (burn off the skin) stuffed with smoked sausage strip (cut in half lengthwise, then cut the halves in half) plus cream, jack, and queso fresco. Wrap in bacon strips and sprinkle with dry rub before grilling.

The best armadillo eggs are made this way:

Combine chorizo, bisquick, and grated cheddar like you are making sausage balls and flatten like a pancake. Stuff skinned red jalapeños with cream cheese then wrap with the sausage/cheese dough. Dip in egg wash then coat with seasoned breadcrumbs moistened slightly with canola oil. Bake at 400 until browned and the cheese starts to escape.

I used to enjoy scotch eggs... Hard boiled egg wrapped in ground breakfast sausage, rolled in bread crumbs and deep fried. Served hot with a little brown mustard... Beautiful... Great eats. They serve them at RenFest...

Straw, a while back I braised a pork belly, cut it into squares after it cooled, and bacon wrapped and grilled for a tailgate party. That's how you'd make "Bacon wrapped bacon". It was a big hit.
