Dice up a bunch of onions, raw jalapenos, tomatoes, cilantro, and whatever else you want in there. Mix it with tomato paste, in a blender if need be.

I make pico all the time without the paste, but it's been a long time since I made hot sauce. The amount of each item to use depends on what you want. Play around with it til you get it right.

Boil 4 or 5 jalepenos and about 1/2 of a chopped onion until the peppers turn light green. Cut the stems off the peppers.

Take the peppers and onions (save the water) and put them in a blender with a handful of rinsed celantro and chop it up some.

Don't lean over the blender when you open it up!

Then add a can of whole, peeled tomatos, 1/2 a spoon of garlic, a little salt, a little lime juice, and a little of the water you saved. You can use garlic powder if you don't have a jar, but not as good.

Blend that a little, just enough to mix it good. Don't want it too watery.

Best thing to do is just keep experimenting till you get something you like.

I use one habenero pepper to a blender full of tomatos, onions, cilantro, garlic, a little salt and lime juice. Blend away.

My own creation. Take tomatoes and jalapenos and slice in half (take seeds out of peppers for a milder sauce). Quarter onions. Peel some garlic. Put all of this on a baking sheet and spray with pam or brush lightly with olive oil. Roast in the oven for about an hour on low heat, just about when the tomatoes and onions start getting black on the tips. Take everything out and add a little salt and lime. Blend.

I've got a great pineapple salsa recipe, but it's a secret.
