Both. I grew up with knowing A as a kolache (with a Polish grandmother), but then I discovered B. My Polish aunt in Chicago is horrified that we consider B kolaches down here, so I sent her an article from the Chronicle yesterday that talks about the origins of B.

What Jackal said, except I just had the Snook Bakery and all the Czech's in the Brazos Valley to base my opinion on.

A. B is something else similar to a kolache, but it's different. My kolache recipe goes back to when my relatives came from what was then Moravia. Fruit, cheese, and poppy seed only, no meat.

B is good, but not a kolache. And when you say "kolache", the "e" is silent. Unless you also pronouce pecan "pee-can", or Brazos "Bray-zos", then you're hopeless...

A = kolace. One is pronounced "KO-lotch" and the plural is "ko-la-CHE."

B = klobasnek. Plural is klobasneki.

At least that's what I was taught by my Czech friends.

A. This is what we had grow up.
B. We called this a "pig in a poke" or "pig in a blanket." Didn't see this "kolache" until about 3 years ago in HEB.

While I was a member of the Czech Club they use to bring kolaches from Snook. Never had the sausage ones.

I am part Czech and Polish and grew up in a very Bohemian part of Texas...

A is a Kolache
B is a Klobasnek or Klobasniki

Kolaches are a pastry (typically open faced) containing fruit or some other sweetened filling.

Klobasniki are a pastry filled with meat (typically sausage or ham) and often include cheese and/or peppers for additional flavor.

Czech grandmother spoiled us grand kids

My favorite kolache was grandma's prune kolache. She mixed it with pear to mellow the prune. Bread was a potato-type dough. Sweet, but NOT super sweet. The stuff that most bakeries pass off as kolaches is a glorified jelly doughnut sliced in half.

I would get in arguments with the food staff at A&M over this.

Kolaches are representative of A. They are an open faced pastry with a pocket filled with fruit or cheese

B is a Klobasinky. It is a closed pastry filled with meat.

Anything other than what is mentioned above is false and not respecting Czech/German/Bohemian heritage.
