With the new Heath Department Food Establishment Manual now being implemented, I won't be surprised if restaurant scores start dropping as a whole. In this case, all of the Republic's violations were covered in the old rule book, so no excuses.
If restaurants haven't made some serious adjustments to the new rules, their scores will be hurting. Some of the new rules in the manual include receiving point deductions for unpaved parking lots, bare hand contact with ready to eat food, lack of first aid kit, exposed arm hair, and insufficient lighting.
The new rule book also covers more extensive points on cleanliness of walls, ceilings, floors and exterior, more modern cooking techniques, like sous vide and non-traditional meats and poultry. There is also a whole new section covering bed and breakfasts, food trucks and camping outfitters.
