At the prices they charge you would think they could keep things a bit cleaner. The last time I was there the bartender was putting dirty beer bottles in the ice used for drinks. I asked for a gin and tonic and he used the ice with the dirty beer bottles in it. I said no thanks and left.

Why didn't you tell us about ur experience before the scores hit public eye? Or did you tell manager ?

I wonder what the average home kitchen would score on one of these inspections?
Christopher's scored 100. Just eat over there for a while before going back to the Republic.

It sounds like they passed the inspection.
They got dinged for the back half of the restaurant being "missing".
I agree with the op. If I'm gonna go to a hole-in-the-wall I'm not gonna complain about the cleanliness, I sorta know what I'm getting myself into, but if I'm going to a fine dining establishment I'd expect them to keep the place in sound working order and clean.

Health inspections, albeit necessary, are extremely inconsistent and often rediculous.
If there's a true health threat, there's a mandatory closure, which is good. Otherwise, the rest of the stuff is very subjective in nature and often sounds way more menacing than it is . Ex -5 pts for a cell phone sitting next to an olive oil container (personal item on a food contact surface).
Sincerely it's excessively alarmist in nature for the most part.

Items 3 and 5 not much to see; pretty much everywhere; even 1 occurs lots of places... depends on where the insects were if it is worrisome.

I wondered about bugs and other "pests" when they tore down part of the building - seems everything would run to any part still standing . . . on the other hand, it should be a lot easier to exterminate now.

You have to appreciate the places that can put together a string of perfect 100 scores. Hard to do and requires a commitment to detail. No coincidence the food is also very good.
Being a past restaurant guy I can tell you I have never seen inspections like they do in BCS. There is tough and then there are these guys.

With the new Heath Department Food Establishment Manual now being implemented, I won't be surprised if restaurant scores start dropping as a whole. In this case, all of the Republic's violations were covered in the old rule book, so no excuses.
If restaurants haven't made some serious adjustments to the new rules, their scores will be hurting. Some of the new rules in the manual include receiving point deductions for unpaved parking lots, bare hand contact with ready to eat food, lack of first aid kit, exposed arm hair, and insufficient lighting.
The new rule book also covers more extensive points on cleanliness of walls, ceilings, floors and exterior, more modern cooking techniques, like sous vide and non-traditional meats and poultry. There is also a whole new section covering bed and breakfasts, food trucks and camping outfitters.
So if you're catering a cattle run with emu on the menu and have a question about your food-handling employee with a prosthetic arm and service animal, everything is covered in the new Heath Department Manual.
