Last of the Mohicans is great. I also really like the Black Hawk Down soundtrack. It captured the event really well in my opinion. I know it's not a movie, but I like the John Adams soundtrack as well.

For me John Williams is the best. Star Wars, Indiana Jones, Jaws, 1941, Superman, Midway, Close Encounters of the Third Kind, Home Alone, Jurassic Park....

Hans Zimmer is also awesome with scores like The Rock and Crimson Tide, Nolan's Batman movies and Gladiator.Jerry Goldsmith with many Star Trek scores, Alien, Patton, and the Rambo movies

James Horner with his work in Star Trek, Aliens.

All of the LOTR and The Hobbit movies to round things out.
