The liklihood of every chicken or sheep breeder being bad at their job is lower than the liklihood of those species just being more prone to disease than another.

Disease pressure for chickens is immense, especially for backyard flocks. Every starling, duck, goose, mockingbird, etc. has the potential to carry a pathogen.
