This is a little different: Cock-A-Leekie Soup
recipe from the Backyard Chef in Britain,
but I did first eat this as a child in Central Texas.

I crave several kinds of Italian cheese, and also French Onion Soup that is usually topped with melted cheese, so thought Zuppa Tuscana might be worth a look at on the internet.
Found it has Kale, which is bitter to me...but I do like the anise flavor of Italian sausage and this recipe has a ton of that...will have to try it.

I don't like kale at all. For this recipe pile it in there. Turns out great. I've read you can use spinach as an alternative and would have gone that route if the kale version wasn't so darn good.

I'll need to find the recipes because I made them back before kids, but I used to experiment every other Sunday or so with soups. Favorites I recall were:

Beef and Leek
Thai Tom Kha
Butternut Squash with bacon and cream
Tortilla

And regular rotation of chicken and vegetable, tomato basil, French onion

This soup never fails to be a hit. I use one jalapeno and one poblano, and double up on the buttermilk. Country ham makes for a nice addition as well. When it's cold outside the entire house craves this soup, King's Hawaiian rolls are the best bread to go with it.

We had too many potatoes and needed to use them, so I roasted some on Thursday and baked some on Saturday -- and then made a baked potato soup yesterday with the leftovers.

Made it really simple:

Sauteed diced carrots and onions with some garlic, salt and pepper
32 ounces of chicken broth
Dry herbs -- rosemary and thyme
Scooped out potato "meat" from the baked potatoes and dumped in the broth
Roughly smashed with wooden spoon -- left semi-smooth
Added half-and-half until color and creaminess felt right
Finished with bacon, a butt-load of sharp cheddar and the roasted potatoes, cut into dice-sized pieces and folded in for texture and color

Garnished with green onion

It was really good.

Google "Hard Rock Cafe Baked Potato Soup" and bake the potatoes the day before and put them in the fridge - they will stay in firmish chunks in your soup baking them the day before.

I got it from a Thai cookbook. There are some online but I do not know if they are exact. I just remember it had kaffir lime leaf and lemongrass.
