Looking for a nice knife for a gift. As far as style, a clever or butcher type, I want something a little rough like it has clearly been forged. I'd love to buy from a small business or individual, a veteran would be a plus. Any recs?

May not be rustic enough for you but these are damn good knives handcrafted in Dover, Ohio. Lifetime guarantee. Mine are 25+ years old. Steak knives are the oldest at 31 years.

I've bought from Serenity Knives in Houston. Small shop 2 guys. Beautiful work.
Ended up going with them (Iron Grove Tool Co.) Really nice knife, and they were more in my price range. Also found out they offer classes where you can make your own knife. So I'll be hitting that up at some point.

check out this guys Facebook page. He makes dang good knives. The blade is made from a horse rasp and he uses various woods for the handle. My personal favorite is the cholla wood and he fills in the holes of the cholla with a maroon resin.
