How do you like your fish fried? Personally, if I'm cooking catfish, bass or panfish, I use cornmeal mix (hard to find) spice with salt and pepper or Tony's. If I can't find cornmeal mix, I just use corn meal with a touch of flour and baking soda (and seasoning). I don't use anything to make it a wet batter.

Tempura can be good.

And there's always room for cod or haddock fried in a wet flour batter.

Oh...what do you fry in? Usually I will use lard...funny enough, it makes it light and crispy. I will also use peanut oil. Veg oil sucks.
Thoughts? What do you all like?

Well, it is pretty traditional in southern fried fish.

Use corn flour instead. It's ground finer than cornmeal.
Also, there's about a 99% chance that the restaurant that serves you the best fried fish you ever had either used soybean oil or vegetable oil, which is mostly soybean oil.

The only times I have eaten halfway decent fried catfish in a restaurant were in Alabama and Georgia. I think a lot of it for me had to do that it was fried with the bone in and likely was caught out of the river. It may have been the bone in rather than being wild. Kind of like a pork chop tastes better with bone in.

Dip in buttermilk, coat in Louisiana Fish Fry, fry in peanut oil.

I also cut it into thin strips, gets a little crispier.

I mix 2 cups cracker meal (half saltines, half ritz) with 1 cup of panko and 1/2 cup corn flour. Season with slap yo momma.

I put the fish in batter made from beer and self rising flour first and then dredge them in the dry mix before frying.

Also, sprinkle with Tonys or Slap ya Mama directly out of the grease.

Coat in yellow mustard then whatever cornmeal/flour mix is handy with a little Tony's added in.

I think a lot of people get an idea of the way catfish tastes because the farm raised crap. just like farm raised salmon is disgusting, farm raised catfish leaves a lot to be desired from its wild counterpart. Again, like I said in my above post I don't know whether it is the fact that they are fillets rather than bone in or because a farm raised catfish just sits around, eats corn and gets fat while the wild one is out fighting for its survival and swimming.

I love catfish...whether it be from the store (which usually indicates farm raised) or otherwise...to say Catfish is disgusting...on top of saying that cornmeal is wrong...thats just communism.

guy probably doesnt like hush Puppies either...

For fried catfish or crappie, I revert back to the blue bag of Louisiana Fish Fry. I'm sure there are better ways to do it, but it was what was always used when my family had fish frys while I was growing up.

Google the ad hoc crispy fried fish recipe. Beats the carp out of any recipe here.

I like a lighter breading... I typically mix cornmeal, bleached flour, and Tony's. Can substitute Zatarains for cornmeal. Point is I prefer flour mixed in at about 50% proportions. That is a personal preference, and I don't believe there is any right or wrong answer.

Fish. Louisiana Fish Fry (blue bag). Peanut oil.

Heat to 360, fry in batches (cook hush puppies before fish though!)

Dats how I does it.

I'm gonna have to disagree on that. Cook fish first, the drop a few spoons of fish grease in the hush puppy batter. Keeps it nice and moist.

I just mix the beer and self rising flour together until it's about crepe batter consistency. Usually about 1 heaping cup of flour to one beer.

Pretty much everyone I serve it to says it's the best fried fish they ever had so my confidence is pretty high on this one already.

Fried catfish is good eats. Soak for a few minutes in ice water. Dredge in cornmeal and flour with a generous amount of homemade Creole seasoning and into the deep fryer.

We fo mahi strips in panko alot which is really good. Tonight we pan fried a whole scored snapper like we've had at Mexican beachside restaurants.

Cut fish into strips about 2 fingers wide and as long
Put in a pan and sprinkle liberally with Tabasco and then mix in mustard
Use 1/2 Zatarains and 1/2 yellow corn meal mixed together with enough Season All seasoning to where you can just taste the Season All on a moistened finger tip.
I mix this in a gallon zip lock and then put the fish strips in the bag and shake vigorously.

Fry and enjoy.
