How do you like your fish fried? Personally, if I'm cooking catfish, bass or panfish, I use cornmeal mix (hard to find) spice with salt and pepper or Tony's. If I can't find cornmeal mix, I just use corn meal with a touch of flour and baking soda (and seasoning). I don't use anything to make it a wet batter.
Tempura can be good.
And there's always room for cod or haddock fried in a wet flour batter.
Oh...what do you fry in? Usually I will use lard...funny enough, it makes it light and crispy. I will also use peanut oil. Veg oil sucks.
