Happy Tuesday all. Has anyone else discovered this guy? I watch him a lot and just wanted to share the link to his channel. I love just about everything on his show, including the awesome dogs.

He's from Altus, OK (if I remember correctly). Believe he and his wife have a restaurant there

I love beans in chili. Also love watching people squirm when I tell them the hardships of growing up and we had to put beans in chili to extend our food, if we even got the luxury of chili. Do it in a serious voice touched with a bit of anger and people get all apologetic real fast. (It is true though).

I have two of his cookbooks and they are great, especially since -- as a cowboy chef -- he utilizes ingredients that are easy to carry and cook. So he's okay with canned things, etc., because that's what he would use out on a ranch.

His recipes ain't fancy, but they usually taste pretty darn good.

He once beat Bobby Flay in a chicken fried steak competition. Which is pretty cool.

I watch a LOT of YouTube cooking channels - Josh Weismann, Babish, Serious Eats, Kent Rollins, etc - but Uncle Roger is by far the funniest.
